Tonight I am writing to let you know about one of the easiest and most delicious comfort foods…chicken pot pie.
The recipe is super simple! All you need is a package of two refrigerated pie crusts, two packages of frozen mixed vegetables, a couple of pre-cooked chicken breasts, two cans of cream of chicken soup and some seasonings of your choice.
Follow the instructions on the pie crust box for the double crust. While you are prepping this go ahead and boil your veggies to get them tender and cook your chicken (unless you are using leftovers). Once your crust is prepped, mix the tender veggies, cream of chicken soup and chicken in a bowl and add your seasonings (I like to keep it simple and use salt, pepper and garlic powder). Now you are ready to add the mixture to the pie and continue continue cooking for at least twenty minutes (following the pie crust instructions).
The only thing left to do is enjoy!
